Is there a perfect pancake? For most of my life and maybe yours, too, we were taught certain things such as foods should taste a certain way to be perfect, be made with only the ideal ingredients and no substitutes, and even look a certain way. Further, these foods must be perfectly round or squared and flawless, but that's heavy b.s. The truth is what we learned as a child or in the past may not be true for the present and future. Health is an ongoing change unless you just don't care about your health! Balancing your food and beverage intake, your libations, exercise and other variable choices are an ongoing choice that you make. Nothing is perfect. Welcome to the new normal.
I love pancakes... who doesn't? But I don't love sugary, carby, heavy foods that make me feel uncomfortable and very bloated after I eat them. That type of eating behavior is sooooo 15 years ago. So no more over eating and let's use a change of ingredients, too. Gluten Free protein pancakes can be the beginning of your new unique and creative chef capabilities.
This had me thinking a lot... And I did something about it. I adjusted my pancake recipe to add protein and a few other special ingredients and my pancakes still tasted great, but their healthier and I can eat them more often and feel good about them. I shared them with others and we talked about flavor profiles, textures and complimentary ingredients that could be improved.
Pending what you add to them, such as your gluten free flour choices (almond flour, coconut flour, buckwheat flour, all purpose blends, etc) and vegetable based protein, spirulina, maca, or others there will be a nutty or small texture change to it that is unique, not bad. Always be sure all ingredients are clearly labeled gluten free. Avoid corn flour and consider moving away from traditional rice flours for pancakes or at least blend them. Change your milk to a non dairy milk, too. Perhaps add chia seeds, flax powder, berries of choice! Like most non-traditional (healthier) food ingredients, embrace these delightful tastes, don't be disturbed by change. In fact, you may want to be disturbed by the amount of sugar and carbs you were eating :)
Gluten Free Pancakes Ingredients
- 2 organic eggs
- 1 cup of organic milk
- 1 cup of gluten free flour (coconut, almond, all purpose blend) non GMO
- 1/4 cup of mixed protein powder (hemp, vanilla plant protein meal) non GMO
- 1 tsp of maca powder
- 1 tsp of spirulina (adds green/blue tint)
- 1 whole apple shredded non GMO
- 1/2 tsp baking soda
- squeeze a 1/4 organic lemon (optional)
Gluten Free Pancakes Recipe
- In a large mixing pan, whisk two eggs
- Add a dash of salt (sea salt or pink salt to taste)
- In a separate bowl add flours, powders, baking soda and mix. Then add into the liquid bowl and mix again thoroughly for batter. If mixture looks too liquid add more gluten free flour to thicken. Mix well.
- Scoop batter into your sauté pan (small or large pancakes) and with low/med, heat on both sides until corners are golden.
- Pancakes may appear dark green/blue-ish due to the spirulina, this is a good thing. Yummy!
- Stack all warm pancakes on plate and bring to table for serving.
- Enjoy with Melt organic butter, raw honey, jam, yoghurt on top, fruit, and enjoy with hot tea.
